Roasted Butternut Squash Seeds

Total time: 50 minutes

If you are cooking with butternut squash and are about to put the seeds into the bin, then stop right there! Don’t throw these delicious and nutritious gems away because you can roast them into a tasty, cheap and healthy snack instead.

Here’s how:

Ingredients:

  • Butternut squash seeds, rinsed and patted dry
  • 1 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 pinch of Salt
  • 1 pinch of Black pepper

Method:

Preheat the oven to 150°C.

In a large mixing bowl, combine all the ingredients and mix together. Line a baking tray with kitchen foil. Spread the seeds in a single layer. Bake for 45 minutes until the seeds are crisp, turning every 15 minutes. Let the seeds cool before transferring into an air tight jar.
